Almost allergen-free chocolate chip cookies

1/2 cup vegan margarine (Earth Balance)
1/3 cup natural salted peanut butter (smooth or crunchy)
1/2 cup brown sugar
1/4 cup white sugar
1 large egg
1 1/2 tsp. vanilla
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. coarse salt
1 1/2 cups gluten free baking mix
1 cup chocolate chips

Preheat oven to 350 degrees.

In a medium bowl with an electric mixer, mix together Earth Balance, peanut butter, and sugars until well blended.

While still holding the mixer, add egg.

Pour in the vanilla, baking soda, baking powder, and salt.

Add baking mix, 1/2 cup at a time. Do not overmix.

Switch to a rubber spatula and mix in the chocolate chips.

Bake for 8-9 minutes.
